2 teaspoons orange marmalade all fruit spread
¼ cup non-fat ricotta cheese
2 whole grain waffles, toasted
2 apricots, sliced
Top each waffle with 1 sliced apricot. If desired, make a sandwich by placing on waffle on top of the other with fruit in the middle.
If you are not a fan or orange marmalade, subsitute with 2 tsp. of agave nectar.
