Apricot Ricotta Waffles

Apricot Ricotta Waffles

Ingredients

2 teaspoons orange marmalade all fruit spread

¼ cup non-fat ricotta cheese

2 whole grain waffles, toasted

2 apricots, sliced

Directions
  1. Whisk fruit spread into ricotta.
  2. Spread half of ricotta mixture onto each toasted waffle.

Top each waffle with 1 sliced apricot. If desired, make a sandwich by placing on waffle on top of the other with fruit in the middle.

If you are not a fan or orange marmalade, subsitute with 2 tsp. of agave nectar.

Nutrition stats: 297 calories, 12g protein, 47g carbs, 6g fiber, 7g fat
